Let's salmon!













salmon head is one of my favorite snacks. at about 1.25+ per head, thats pretty damn cheap eats.
soak the head in cold salted water to drain any of the bloody stuff. than rinse, i usually rinse out as much blood as i can from the gills because they look nasty red. (plus it reminds me of when my jack dempsy got smashed by a falling rock in his tank and his gills flared and he was bleeding. D:)

split head down the middle, than remove the gills with kitchen scissors.














i use butter to grease the pan, and just put soy sauce and lemon on the heads and put them in the oven at 350. i don't really keep track of the time because there is so much fatty tissue in the head that the bits of meat wont get dried out, but its usually around 30-45 mins. but eventually put the broiler on high till the skin starts to bubble and get crispy.













sadly i burnt half of this guys eyeball when i dropped him skin side down on accident in the preheadted baking tray, giving him cataracts. if the eyeball doesnt touch a scorching hot pan it should still be clear after cooking unless you char the shit out of it on a grill.
